These Vegan Burrito Bowls are not just a good time to make right now… but forever for the rest of our lives. Legit happiness in a bowl and I think we can agree we all need a little happiness in a bowl.

If there was ever a good time to be vegetarian now would be it. I don’t know if you have experienced the same but I love when our ingredients are still available to purchase but yet all the meat shelves are empty.

Even if you’ve got to eat this without the optional ingredients like guacamole and sour cream (which by the way a dairy-free plain yogurt is a fab substitute).

Not only is this burrito bowl a fabulous recipe to make right now but it is one of my absolute favorite meal-prep meals too. Make it on a Sunday and build the meal-prep bowls for the week.

What goes in a vegan burrito bowl?

The basic ingredients of what goes into a burrito bowl is black beans, corn and a cilantro lime quinoa. Then at that point you can add whatever other condiments you want into the burrito bowl.

Our taco sauce is actually a REALLY good recipe to make if you are finding yourself not being able to get guacamole and that sorts. Taco sauce is always a fabulous solution and it’s actually extremely easy to make yourself with some basic pantry ingredients.

What if I don’t have all the ingredients?

So we’ll go through all the ways you can adapt with this burrito bowl to help fit into what is going on in all of our lives right now and perhaps not all the ingredients are in the pantry. Here are some lovely substitutes.

Quinoa – You can use rice in substitute for the quinoa if you do not have that on hand. We just like to change it up from rice when we can and the cilantro lime quinoa is suchhhhh a good way to do that.

Black Beans – Pinto beans are another fabulous alternative if you are currently out of black beans.

Pico de gallo – we personally had these ingredients on hand and That’s Low Carb has another really good homemade salsa recipe if you ever want to make another salsa. But if you don’t have the fresh ingredients on hand a simple jar of your favorite salsa will do!

Lime – if you do not have fresh limes available another fabulous alternative is actually either lime juice concentrate and if you are really in a pinch a little lemon juice concentrate works pretty good in a pinch.

Corn – you can use frozen corn, fresh or canned corn. Whatever you have on hand.

How to Make Vegan Burrito Bowls

  • Combine the black beans and corn on a skillet with seasoning. (see above)
  • Cook your cilantro lime quinoa going next in a sauce pan. Put the lid on and let it cook according to instructions. Note: if you use rice instead cook time will vary compared to quinoa.
  • Build your bowl when everything is warm, cooked and ready. Spoon hot cilantro lime quinoa into bowl with a spoonful of black bean and corn mixture and garnish with toppings of your choice ( like salsa, jalapenos, shredded lettuce, guacamole, lime juice, taco sauce, etc. )

These vegan burrito bowls seriously are such a quick dinner. While we may have quite a bit of more time on our hands currently than we normally do it doesn’t mean that eventually things will get back to normal.

If anything this is a fantastic activity to do with the kids to allow them to ‘build their own bowl’ just like you would do if you were ordering at Chipotles. Which lets be honest.. this is going to be costing us WAY less so it’s an absolute winner of a dinner.

What else can I put in my burrito bowls?

Here are some other delicious ingredients you can add to your burrito bowl. If you have a few other spare ingredients and/or you would like a few other ways you can elevate this dish here are a few other ingredients that you may want to add.

  • Shredded Romaine Lettuce
  • Sliced Bell Peppers
  • Sliced Tomatoes
  • Chopped Red Onion
  • Sliced Jalapeno
  • Cheese (or dairy-free cheese alternatives)
  • Sour Cream ( or dairy-free sour cream alternatives – we personally use plain daiya yogurt )
  • Taco Sauce or Enchilada Sauce
  • Hot Sauce

This list is seriously endless. One thing I absolutely love about burrito bowls is that they are living proof you can enjoy delicious flavorful plant-based food and still eat healthy. Now lets go make some burrito bowls!

Ingredients:

  • Batch of our Cilantro Lime Quinoa
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15oz) can corn, drained and rinsed
  • 1 Tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • pinch of salt and pepper
  • A jar of salsa or pico de gallo (optional)
  • Homemade Taco Sauce
  • Guacamole (optional)
  • Lime juice (optoinal)
  • Sour cream and cheese (or vegan alternatives)

Directions:

  • 1. In a skillet over medium heat add olive oil, black beans, corn, chili powder, smoked paprika, salt and pepper. Stir together and sautee for 5-10 minutes, or until mixture is heated through.
  • 2. To construct your bowl, add cilantro lime quinoa, black bean/corn, salsa, guacamole and sour cream (or dairy-free alternative) and any additional toppings you'd like.
