You may enjoy mojitos when you go out to restaurants, but they are really easy to make at home. This famous co*cktail from Cuba has become very popular worldwide in recent years. And you only need a few basic ingredients to make them.

One of my favorite things about this Pineapple Mojito recipe is that it's great for entertaining since not only do most people enjoy them, they go well with a variety of different cuisines.

You can serve them with appetizers like chips, guacamole, and fresh tomato salsa. Or try them at your next barbecue with your favorite vegan grilling recipes. They taste amazing with everything from chickpea and veggie stir fry to green bean curry.

Instructions

First make the pineapple simply syrup by combining chopped pineapple, coconut sugar, and water in a saucepan. Simmer, stirring occasionally, for about 30 minutes. Allow to cool.

Amy's tip

Make the pineapple simple syrup in advance, let it cool, and refrigerate it until you're ready to make a co*cktail. While you can strain out the pineapple, I prefer to leave it in the syrup and add it to my mojito along with additional fresh pineapple chunks.

After you prepare the pineapple simple syrup, making a Pineapple Mojito is quick and easy.

  1. Place lime wedges, pineapple chunks, and mint leaves in a tall glass. Muddle them to release their flavors. If you don't have a co*cktail muddler, the handle of a wooden spoon works great.
  2. Add the pineapple syrup and rum and stir to combine.
  3. Add ice cubes and soda water.
  4. Garnish with a pineapple wedge and enjoy!

Can you make a non-alcoholic pineapple mojito?

If you prefer a mocktail, simply leave out the rum. It will be just as refreshing and delicious.

Why use coconut sugar?

Coconut sugar comes from the sap of the coconut palm tree. If you prefer, you can use cane sugar instead.

Does simple syrup need to boil?

When making simple syrup, the water needs to be hot enough to dissolve the sugar but not hot enough to boil.

  • 2 wedges lime
  • 2 chunks pineapple
  • 4 mint leaves
  • ounces white rum
  • ounces pineapple simple syrup, (recipe follows)
  • ice
  • club soda, (soda water)
  • pineapple wedges, for garnish (optional)

Pineapple simple syrup:

  • 1 cup pineapple, chopped by hand or in a blender
  • 2 Tablespoons coconut sugar, (or more, to taste, or substitute cane sugar)
  • 1 cup water

Instructions

To make the pineapple simple syrup:

  • Simmer the 1 cup chopped pineapple, coconut sugar, and water over medium-low heat, stirring occasionally, for 30 minutes. Taste and add more coconut sugar to achieve your desired level of sweetness. (You can strain the pineapple out if you prefer, but I like to keep the fruit in the simple syrup.)

  • Allow to cool and refrigerate until ready to use.

To make a mojito:

  • In a tall glass, add the lime, pineapple chunks, and mint leaves. Muddle a few times to release the flavors.

  • Add the pineapple simple syrup and rum and give the co*cktail a stir.

  • Add ice cubes to fill the glass.

  • Top with club soda.

  • Garnish with a wedge of pineapple, if desired, and enjoy.
