This Skillet Chili and Cornbread is the ultimate one-pot meal. Hearty, spicy turkey and veggie chili is topped with slightly sweet cornbread. Comfort food at its finest!

If you’re ready to leave summer meals behind and indulge in some hearty comfort food, this is the recipe for you!

I posted this recipe way back in 2018 when I first started transferring recipes from my IG page. the older version was delicious, but with my newer approach to more whole ingredients, I thought it needed a bit of a makeover.

This is essentially two recipes in one. The first is a zero-point turkey and veggie chili that is the best fall meal–warm and full of good-for-you ingredients.

Plus, on both Blue and Purple, the chili alone is 0 SP. Perfect for those weeks when you know you’re going to be eating over your points quite a bit and want to offset with a 0 SP meal that feel like you’re indulging.

I like to make the chili loaded with lots of veggies. They cook down so much that you hardly know they’re there. I’m also not a huge fan of beans in my chili.

I know–I’m weird. You could add a can of drained beans instead of the zucchini to make this a more traditional chili.

So, you could just make that chili and call it a day. But if you really want to step your chili game in the easiest way possible, with a complete meal in one skillet, let me introduce you to this impressive Skillet Chili and Cornbread Pie. Only 326 calories for a huge serving!

This just screams comfort food. I know it seems like a lot of ingredients, but it all comes together so quickly.

And you don’t have to use a cornbread mix (although you could), so you know all of the ingredients going into your meal. Let’s not forget how much we’re cutting back on all of the sugar and additives in boxed mixes.

Ingredients

FOR THE TURKEY AND VEGGIE CHILI

  • 1 lb 99% fat free ground turkey
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup chopped celery, about 2 small stalks
  • 1 1/2 cups shredded carrots
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • 4 cups diced zucchini, about 2-3 medium
  • 1 15-ounce can fire roasted tomatoes
  • 1 15-ounce can tomato sauce (I used Muir Glen organic)
  • 1 cup fat free chicken broth

FOR THE CORNBREAD

  • 3/4 cup yellow cornmeal
  • 3/4 cup self-rising flour (I used Gold medal brand)
  • 1 tbsp baking soda
  • 3/4 cup unsweetened, original almond milk
  • 2 tbsp honey
  • 2 large eggs
  • 1/4 tsp salt

Instructions

  • Preheat oven to 400. In a very large, oven-proof skillet, brown turkey. Add in onion, garlic, and celery and saute until soft, about 5 minutes.

  • Add in carrots and seasoning. Saute until spices are fragrant, about 3-4 minutes.

  • Add in zucchini, both cans of tomatoes, and broth. Bring to a boil, lower heat, and simmer for about 10 minutes.

  • While chili simmers, in a medium bowl, whisk together flour, cornmeal, baking soda, almond milk, honey, eggs, and salt.

  • Pour cornbread batter evenly over chili. Bake for 20-25 minutes, or until browned. You can broil the skillet for a minute if it’s not browning.

  • Add whatever chili toppings you prefer. Points/cals will vary.
